2 What does Isolated mean? - Each connector has a non-conductive mounting washer added during install. This provides insulation from the panel and other connectors to reduce ground loop concerns.

3 Stereo or Mono? - The bulkheads are stereo - they will pass a stereo to stereo signal or a mono to mono signal.

If you need multiple plates with the same number of ports, but with different colored washer configurations: (for example you need Qty. 5 6 port plates with Black washers and Qty. 5 6 port plates with Red washers) Order the total number of plates you need (10) and select "Mixed Washers" for your washer color choice - then in the message box put something to the effect of "5 Plates with Black, 5 Plates with Red". This way you'll get the quantity discount for all 10 plates and still get your washer variety choices.
